Quick Veggie Pasta Salad – #BeInformedXFoodieswithLove
This Quick Veggie Pasta Salad recipe is created in collaboration with Foodies with Love, a homegrown healthy homemade dried veggie pasta brand.
(Serves 2 adults and 2 kids under 5)
1 cup radiatori veggie pasta by Foodies with Love
1 cup spiral veggie pasta by Foodies with Love
1 can chickpeas, drained
1 can sweet corn kernels, drained
1 can lentils, drained
1 packet salad greens
1 cup cherry tomatoes
120g Sesame Sauce by Foodies with Love
Fried bacon & ham strips (optional)
1. Boil water in a pot. When water is boiling, pour in both types of veggie pasta. Cook for 3-5 minutes. Drain the pasta.
2. Mix chickpeas, corn kernels and lentils in a steamer and steam on high heat for about 5 minutes.
Note: This step is optional but I prefer not to eat canned food without “cooking” them.
3. In a big salad bowl, toss all ingredients until well combined – cooked veggie pasta, chickpeas, corn kernels, lentils, salad greens, and cherry tomatoes.
4. Add in sesame sauce (this is the star of this recipe!). Mix until all ingredients are well coated by the sesame sauce.
